Kitchen appliances and utensils:
- a pan with a thick bottom (for frying) and a lid;
 - a bowl;
 - tray (or any work surface);
 - stove (hob);
 - tablespoon;
 - tea spoon;
 - 200 ml glass.
 
Ingredients

| Green lentils | 200 g (or 1 cup) | 
| Bow | 1 PC. medium size | 
| Bulgur or rice | 50-70 g | 
| Tomato paste | ½ tbsp l |

| Dry mint | 1 tsp | 
| Sunflower oil (olive oil) | 2-4 Art. l | 
| Water (or broth) | 2-3 glasses (200 ml glass) | 
| Red and black pepper | taste | 
Step cooking
- Take one medium-sized onion, peel it and cut into cubes. In a thick-bottomed pan, pour 2-4 tbsp. l sunflower or olive oil. Add chopped onion to the oil.

 - Fry until golden brown.

 - While the onion is fried, take our green lentils (200 g) and pour it onto any surface that is convenient for you (a tray, a board, any working surface). Carefully inspect and sort out lentils to get rid of pebbles or debris, if any.

 - Pour the lentils into a bowl and rinse with water 1-2 times.

 - Back to the bow. When it gets a golden hue, add ½ tbsp. l tomato paste. Mix well and fry for a few more minutes.

 - Now take the washed lentils and put in a pan to the onion.

 - We wash under running water 50-70 g of bulgur or rice.

 - Then add bulgur (rice) to the pan to the rest of the ingredients. Mix.

 - Pour 2-3 cups of pure water into the pan. Instead of water, you can use chicken or meat broth.

 - Now add the spices, 1 tsp. dry mint, red and black pepper to taste. Also salt to taste. But do not forget that tomato paste is already salty, do not overdo it.

 - Mix well and cover the pan with a lid.

 - Cook the soup until cooked for about 20-30 minutes.

 
Cooking recommendations
Lentil soup - red or yellow, brown or black "beluga" is cooked quickly, does not require separately cooked broth, and is ready to accept any spices. This is a wonderful versatile soup for every taste and season. Such soups are mainly boiled thick and aromatic, and the spices themselves give it a "nationality".
Mediterranean lentil soup can be cooked by adding thyme and fennel. Indian flavor will add garlic, hot pepper, cumin and turmeric. And in the Middle East, a whole bunch of seasonings is added to lentil soup: cumin, coriander, cardamom, sweet and hot paprika.
