Ingredients
- Water - 2 L
 - Pork on the bone - 500 g
 - Sorrel - 200 g
 - Potato - 500 g
 - Eggs - 3 pcs.
 - Salt - 1 tsp.
 - Bay leaf - 1 pc.
 
Step cooking
- In 2 l of cold water, place 500 g of pork on the bone and bring to a boil. Remove foam from the broth until the broth becomes clear. Add 1 tsp to the broth. salt, reduce heat, cover and cook until meat is cooked.

 - Remove the prepared meat from the broth, cool a little and cut into pieces. Peel 500 g of potatoes, cut them into cubes about 2 cm. Place the potatoes in the broth and boil until half cooked.

 - Take 200 g of fresh sorrel, rinse, remove the stems and cut into strips 5 mm.

 - Beat 3 eggs in a separate bowl.

 - Add chopped meat and sorrel to the potatoes.

 - Boil for 2-3 minutes and with a thin stream, constantly stirring, pour in the beaten eggs. Add 1 bay leaf to the soup, cover and remove from heat.

 - The soup is ready to serve, enjoy your meal.

 
Cooking recommendations
- To prepare the broth, any meat of your choice is suitable.
 - To make the broth clear, soak the meat for several hours in cold water, and when boiling, collect all the foam.
 - Sorrel can be used fresh or frozen, the taste will not change.
 - You can add chopped green onions and any other herbs to the soup.
 - To add spice and piquancy, add black or red ground pepper or a mixture of dried herbs to this dish.
 - Serve the soup still hot with croutons or crackers, garnishing with a sprig of greens.
