Step cooking
- In 300 grams of premium flour, add baking powder for dough (11 grams). Sift the mixture into a deep bowl with a capacity of 4 liters (or more).

 - Add a bag of vanilla sugar (8 grams). Mix the contents of the bowl well.

 - Grate 250 grams of frozen butter on a coarse grater. When grinding, periodically mix portions of the resulting oil crumbs with flour.

 - After you rub the whole piece of oil, rub the contents of the bowl with your hands until the butter flakes are medium in size.

 - Add 300 grams of fresh cottage cheese to the bowl. Shuffle.

 - Break 1 chicken egg in a separate deep plate, stir the protein with the yolk with a fork. Pour the egg mash into the batch.

 - Knead uniform dough quickly. If the mass is very sticky, add more flour (30-50 grams).

 - Knock down the dough in a lump, divide into 2 equal parts, form a ball from each. Put each ball in a plastic bag or wrap it with cling film. Put the blanks in the refrigerator for 1 hour.

 - Sprinkle flour on the work surface (from the remaining 50 grams). Put the dough from the bag on the mat, sprinkle flour on top. Roll the ball with a rolling pin into a circle 3-4 mm thick.

 - Cut a circle with a knife into 24 approximately equal parts (“petals”). First divide the circle into 4 segments, then cut the segments into smaller pieces from the center to the perimeter.

 - On a wide part of the piece, put a little strawberry jam (a third of a teaspoon), slightly distribute it over the piece.

 - Roll the bagel, starting at the wide, spread edge of the segment.

 - Put the resulting bagels on a baking sheet covered with a sheet of parchment. Try to keep the tip of the "petal" at the bottom. Do not stack products tightly, there should be a gap between bagels.

 - Bake the muffin in the oven, heated to 200 ° C, for about 20 minutes. All products are not placed on one baking sheet, therefore they are baked in batches several times.

 - Repeat all steps with the second part of the test. Sprinkle the cooled pastry with powdered sugar (100 grams).

 
Such baking can be done with any jam or thick jam: apple, apricot, plum, cherry and others. Fresh fruit rolled in icing sugar or with the addition of granulated sugar is also used as a filler.
