Step cooking
- Prepare for frying 0.5 kg of shrimp. Cut the shell of each shrimp with scissors along the back to the tail.

 - Open the shell and remove the esophagus.

 - Also remove the sharp end of the shell.

 - Crush 3-4 peeled garlic cloves with the flat side of a knife.

 - Heat in a pan 3-4 tbsp. l vegetable oil.

 - Dip the crushed garlic into the oil so that the oil is saturated with its aroma. Fry for a couple of minutes over medium heat.

 - We spread the shrimp in hot oil in one layer and fry on both sides on high heat for 2-4 minutes (depending on size) - this forms a beautiful crust, and the meat inside will remain juicy.

 - Salt to taste. Squeeze the juice out of half a lemon (or lime), sprinkle shrimp on it. Add to taste soy sauce.

 - Pepper with black ground pepper to taste, keep on fire for a couple of minutes.

 - When serving, you can decorate the dish with herbs and lemon slices.
 
Useful Tips
- Shrimps go on sale fresh, fresh-frozen and boiled-frozen. A double number is indicated on the packages - this is the number of shellfish per 1 kg. Quality shrimp should be free of dark spots and ice in the bag.
 - Shrimp fried in shell are more juicy than peeled, usually such a dish is included in the main category. And if shrimps are intended for further use in salads, then it is better to cook them peeled.
 - King and tiger prawns are almost always cooked in shell.
 - Frozen shrimp before cooking can not be thawed, they are simply laid in a pan and brought to a medium heat until the liquid evaporates.
 - Shrimp frying time depends on their size and condition. Fresh and freshly frozen specimens of not very large size are fried for 8 minutes, and large - 10, king and tiger - 12. If the shrimp is boiled and frozen, the frying time is reduced by 2-3 minutes. Shrimps are ready when they lose transparency and curl up.
 - In addition to vegetable oil, when frying, you can use olive or a mixture of olive and cream.
