 - We turn on the gas or electric stove, put a frying pan on it, pour a little vegetable oil and heat the pan.

 - We put chopped onions in a preheated pan and fry until golden, constantly stirring with a kitchen spatula.

 - Add fried eggplant, grated tomatoes and chopped peppers to the fried onions.

 - Stir the vegetables thoroughly and simmer for 30-40 minutes over medium heat, without closing the lid. Remember to stir the vegetables periodically. Add 2 tablespoons of tomato paste, 1 tablespoon of sugar and ground black pepper to vegetables to taste. Stir the vegetables and simmer for another 5-7 minutes.
